Located on soft volcanic clay in the Apaneca Mountains, Finca Himalaya has been producing coffee since 1875 and is known as El Salvador’s first specialty coffee farm. Mauricio and his team cultivate much of the coffee under shade, using cypress and pine trees to support local wildlife, and hand-pick red cherries at peak ripeness. Cherries for this lot are sorted by ripeness and dried slowly on African raised beds for 20–30 days, turning regularly to ensure even drying, then stored in their dried cherry pods to preserve sweetness and fruit flavors until milling and export.
