La Salvaje is the newest farm from COE winner Fabio Caballero Jr., located high in the mountains of Marcala and surrounded by dense native forest. Acquired around seven years ago and planted with Java, 2025 marks its first full commercial harvest. During our visit to La Salvaje in March this year, we saw firsthand how the cool, shaded environment creates ideal conditions for slow cherry maturation and exceptional cup quality. Cherries are selectively hand-picked, carefully sorted, and slowly dried on raised beds for up to 30 days to maximise sweetness, clarity, and complexity. By preserving the natural landscape and working in harmony with the environment, Fabio Jr. is creating an exciting new chapter in Honduran specialty coffee.
