Ethiopian coffee stands out for its remarkable complexity, shaped by nutrient-rich soils, diverse altitudes, and a dry climate that enhances the character of the beans. Its uniqueness also lies in the country’s incredible genetic diversity, with countless natural coffee mutations growing wild and without heavy chemical intervention. Many coffees are produced from small garden plots, where ripe cherries of all colours are blended, resulting in vibrant, layered flavour profiles. In regions like Guji, the Oromo people cultivate and hand-deliver these wild coffee cherries, giving us the distinct and elegant flavours the area is known for.
